this is my current favorite pasta!! it's absolutely delicious & received rave reviews!! i added some precooked rotisserie chicken for some protein and used grape tomatoes instead of cherry. i also added broccoli for extra veggies :)
i made this loaf a few days ago and it has already disappeared! SO yummy and moist. i think the sour cream is key! i made some adjustments to make it a tad healthier and kid friendly:
1 c. AP flour + 2/3 c. whole wheat pastry flour
1/2 c. light brown sugar + 1/4 c. white sugar
4 big, very ripe bananas
no walnuts
handful of semi-sweet chocolate chips
i am tempted to even cut out the white sugar next time and add 1/4 c. unsweetened applesauce. will let you know how it turns out!
also, i found that this recipe made 1 loaf + ~8 muffins. enjoy!
i usually make muffins instead of a loaf and freeze the extras. to make them a little healthier, i substitute 1 c. of all-purpose flour with 1 c. ww pastry flour. i also use 1/2 c. brown sugar + 3/4 c. white sugar instead of the 2 c. white sugar. to make it more kid friendly, i eliminate the walnuts. muffins bake for about 26 min. i love getting veggies into my son first thing in the morning! next time, i may substitute 1/4 c. unsweetened applesauce for 1/4 c. white sugar.

i used 2.5 tsp of curry powder - perfect amount! i also marinated the chicken with olive oil, salt, pepper, and 1 clove of garlic and then pan fried it.
since the prosciutto is already salty, i might add in some other veggies like mushrooms, onions, and red peppers to help balance it out. also, i would add in some mozzarella to the ricotta/spinach mix for a more cheesy effect!

flavoring is good, but can end up quite oily. the red pepper flakes in the mojo de ajo give it a nice kick!

very yummy! i defrosted them in fridge before cooking vs. straight from the freezer. great with guac, salsa, and some monterey jack shredded cheese!
