Ingredients (yields Serves 4 servings)

  • 4 cups rice
  • sesame oil
  • canola or vegetable oil
  • 2 carrots
  • 1 zucchini
  • 1 yellow squash
  • 1 onion
  • 6 shiitake mushrooms
  • 1 bundles spinach
  • 1 lbs beef (sliced/diced or ground)
  • 4 eggs
  • 1 bundles lettuce, preferably leafy red, green or romaine
  • red pepper paste (to taste)
  • 2 cloves garlic, minced
  • soy sauce
  • sugar

Cooking Instructions

1). Cook rice per instructions on bag.
2). Marinate beef with 3 tbl of soy sauce, 1 tsp of sesame oil, garlic and 1 tsp sugar.
3). Julienne carrots, zucchini, yellow squash. Slice mushrooms and onion.
4). Saute each vegetable in #3 individually in 1 tbl of oil and 1 tsp of soy sauce. Set aside on plate.
5). Blanch spinach in boiling water. Drain.
6). Cook beef. Set aside on plate.
7). Shred a few leaves of lettuce. Set aside on plate.
8). Coat non-stick pan with sesame oil, and cook eggs (sunnyside up or fried).
9). Plate bi bim bop. Put 1 cup of cooked rice in center of bowl. Put a small pile of carrots, zucchini, yellow squash, sauteed onions, mushrooms, lettuce, spinach and beef around the mound of rice. Top with 1 egg and a dollop of red pepper paste to taste.
