Ingredients (yields Serves 6 servings)
- Vegetable Oil (for frying)
- 1 1/2 pounds Chicken tenders
- 1 cups All purpose flour
- 2 Eggs, beaten
- 1 cups Breadcrumbs
- 1 cups Pecans, finely chopped
- 1/2 teaspoons Nutmeg
- 1 Orange zest
- 1/4 cups Maple syrup
- 1/4 cups Barbecue sauce
- 1/2 cups Orange Juice
Cooking Instructions
In a skillet, heat 1 inch of oil over medium heat.
Set out 3 shallow dishes.
Put flour in one, eggs beaten with a little milk in the second and combine breadcrumbs, pecans, nutmeg and orange zest in the third.
Coat tenders in flour, then egg, then breadcrumb mixture.
Fry in pan for 6-7 minutes or until cooked through.
Add maple syrup, barbecue sauce and orange juice into skillet and cook for a few minutes until marinated.
Cool and cut into small bite size pieces.
Serve at room temperature with toothpicks.
