Preheat your oven to 425 degrees.
Line two rimmed baking sheets with foil, creating a slight edge that overhangs all the sides of the pans. This will keep the grease from sliding under the foil. Next, place a cookie-cooling rack on top of each baking sheet, and spray both with cooking spray.
Carefully separate the slices of bacon and lay them across the the racks. Bake in the oven, 15-20 minutes, until crispy. The grease drops down away from the meat. Remove from the oven and drain remaining fat on paper towels. Store in plastic gallon sized bag in the fridge until ready to use.
For maximum ease of clean up, wait until the baking sheets are completely cool. Pop the cooling racks in the dishwasher, carefully pull up the foil to contain all the grease, and simply throw it away.
