Ingredients (yields Serves 4 servings)
- 6 cups baby spinach
- 1 cups sliced strawberries
- 1 cups blueberries
- 1 cups mandarin oranges or sliced peaches
- 1 cups glazed walnuts (optional)
- 1/2 cups poppyseed dressing
- 1 teaspoons fresh lemon juice
- 1/2 teaspoons granulated sugar
Cooking Instructions
In a small bowl, whisk together dressing, lemon juice and sugar. Toss dressing with spinach and place it in a shallow bowl or on a rimmed platter. Decorate with fruit and nuts and serve immediately.

I've been modifying this recipe over the years until finally reaching my perfect formula. Depending on the crowd, I sometimes add crumbled goat cheese. You can easily switch this up in the fall to include apples and pears and do a maple-walnut dressing and crumbled blue cheese.
