Ingredients (yields Serves 16 servings)

  • 1 box brownie mix, with ingredients to prepare the mix
  • 3 (1 oz.) pkgs Edible Easter Grass**
  • 1 tube chocolate decorater's icing, such as Betty Crocker, with tips
  • 1 bag of Cadbury Mini Eggs or jelly beans
  • 16 pastel muffin papers

Cooking Instructions

Preheat oven and prepare brownie mix according to package directions. There are several ways to proceed with the prepared batter.

1. You can scoop the mix into cupcake papers, sprayed with Pam for Baking or Baker's Joy, for a true cupcake effect. Silicone cupcake liners yield best results. Start checking for doneness at least ten minutes earlier than the suggested baking time.

OR

2. Prepare an 8x8 pan as instructed on the package. Allow to cool completely, cover, and refrigerate for several hours. Pop out the entire batch out onto a cutting board. Using your sharpest knife, cut the square into four even squares, and then cut each quadrant again into four to yield sixteen. Place each square in cupcake liner to decorate.

OR

3. Prepare 8x8 pan as instructed and use a round cookie cutter to take out circle shapes. Place each one in a cupcake liner to decorate. (This will yield fewer than 16 and a lot of munchable pieces!)

Use the Edible Easter Grass to form birds nests on top of the brownie shapes. Pipe a small amount of chocolate frosting into the center of the nest. Place 3 jelly beans or mini egg candies onto the frosting and allow to set.

Cover loosely and store in a cool place until ready to display and serve.
