- 1 1/2 cups graham cracker crumbs (10 crackers)
- 1/4 cups sugar
- 6 tablespoons (3/4 stick) unsalted butter, melted
- 6 extra-large egg yolks, at room temperature

- 1 (14-ounce) can sweetened condensed milk
- 2 tablespoons grated lime zest
- 3/4 cups freshly squeezed lime juice (4 to 5 limes)
- 1 cups (1/2 pint) cold heavy cream
- 1/4 cups sugar
- 1/4 teaspoons pure vanilla extract
- Thin lime wedges

I call this the Small Appliance Special. Crush the graham crackers in the food processor. Juice the limes in the citrus juicer. Whip the cream in the stand mixer. Voila! The top rack of the dishwasher is full of small plastic items. If you have each of these appliances, this recipe is truly a snap. So easy. And it's still not too bad even if you have to buy graham cracker crumbs, juice the limes by hand, and whip the cream however you normally do it - or use Cool Whip!
Throughout the year I tend to buy beautiful pie plates where ever I see them for a good price - flea markets, Home Goods, Marshalls, etc. Then I make this dessert to bring to summer parties, telling my hostess that the pie plate is a gift to her for having us. It's a make-ahead dessert (you can make it a week in advance) that is always a hit. Two warnings: ask your hostess if she'll have room to store a frozen pie until just before dessert time, and then make sure to take it out of the freezer 15-20 minutes before serving.
People will start asking 'Ooooh, can you bring that awesome pie?' You can wipe your brow and say 'Ugh, that thing? It's such a pain. But anything for you, my friend.' I won't tell anyone how easy it really is. ;)
