Ingredients (yields Serves 12 servings)
- 1/2 cup margarine or butter
- 1 teaspoon vanilla
- 3/4 cup sugar (try using some brown if you like)
- 1 1/4 cups flour
- 3/4 cup quick oats, uncooked
- 2 eggs
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup mashed banana (about 3 medium, very ripe)
- 3/4 cup semi-sweet chocolate chips

A huge hit! I also toyed with it a little - I used 2 bananas (not 3)... I also used 1/2 c sugar and 1/4 c brown sugar... and added about 1/2 c shredded raw zucchini and probably 1T wheat germ. Next time I might sub in some WW flour.

I used 1/2 cup white sugar and 1/4 cup light brown sugar. I also used mini chocolate chips because I think they work better in a muffin. Lastly, I only used 1/2 cup oats and subbed in 1/4 cup wheat germ to improve the nutritional profile.
