Ingredients (yields servings)

  • 1 1/2 oz spiced rum
  • 1/2 cup fresh blueberries, plus two tablespoons for garnish
  • 2 oz simple syrup
  • 2 lime wedges
  • 2 large fresh mint leaves
  • 1/2 cup crushed ice
  • 2 oz club soda

Cooking Instructions

Muddle the 1/2 cup blueberries with simple syrup, lime wedges and mint leaves to extract their flavors. Add the crushed ice, rum, and club soda and stir to blend. Garnish with the remaining two tablespoons of blueberries and an additional splash of soda.

This pretty drink was the hands-down winner of our Friday Night Cocktail Tasting Party. We only had Captain Morgan Spiced Rum on hand, and this is not traditionally the right kind of rum for a mojito. However, combined with the blueberries (absolutely delicious to eat out of the drink) we felt that the spice was a nice feature and decided to change the name of the cocktail to reflect our serendipity.

My friend Ted is an experienced bartender, and he gives the word of caution that these are messy to make. This is probably a recipe to save for just having a few friends over rather than making them at a bigger party. Ted also felt that coarse sugar is better for muddling the flavors together than the simple syrup. Which is great news - you can make them without having any simple syrup on hand!
