I love that the basic premise of this recipe is that "no special gadgets are required" to pull it off. That's unique coming from a Food Network recipe. This is probably the reason for using shortening as opposed to butter (and it does yield a different texture in the finished product) because it is much easier to mix with sugar than even softened butter. That being said, I followed the recipe exactly the first time I made it as far as ingredients...but I did use my stand mixer. Because I have one. The second time I made this recipe, I used softened butter in place of the shortening and I felt the results were far superior.

Use these cookies and pair them with any kind of ice cream you like, and then match with the appropriate coating for the side - sprinkles (rainbow or chocolate), crushed toasted nuts, mini chocolate chips, crushed peppermint candy...the sky is the limit!
