I had been saving this recipe for ages, waiting to try it. Then a few summers ago, a friend brought me half a watermelon the week before we went on vacation. Fortunately I remembered that I had this recipe and was able to plan ahead to make it when we returned from our trip.

Cut a watermelon wedge into chunks and spread it out on a sheet pan. Freeze for a few hours and then transfer the frozen cubes into a freezer bag. (You can throw the chunks into a bag and freeze it that way, but they will get all clumped together.)

Finally I made the mojitos to bring to my book club on a hot summer night - wow, did everyone love them?! They were such a hit. I am never dismayed at seeing an abundance of watermelon in my fridge anymore.
