Ingredients (yields servings)
- 3/4 pound fresh green beans, trimmed
- 3/4 pound fresh wax beans, trimmed
- 15 oz can kidney beans, rinsed and drained
- 15 oz can pinto beans, rinsed and drained
- 3 scallions, chopped
- assorted fresh herbs, chopped (dill, mint, basil, parsley)
- 1/4 cup olive oil
- 2-3 T red wine vinegar
- a few dashes of hot sauce (Tabasco, Red Hot, whatever)
- salt and pepper to taste
Cooking Instructions
In a covered casserole, combine the beans with 3 T water. Cover and microwave 4 minutes on high. Allow to stand an additional 1-2 minutes. Drain, cool, and chop into one inch pieces. Transfer the beans to a large bowl and add kidneys and pintos. Add oil, vinegar, and hot sauce. Season to taste with salt and pepper. GENTLY combine. Add fresh herbs and scallions just before serving and toss again gently.
