Ingredients (yields servings)
- 3 cups low sodium chicken or vegetable broth
- 8 oz can tomato sauce
- 3/4 cup alphabet pasta**
- 1 1/2 cup frozen peas & carrots, thawed
- 7 oz can garbanzo beans, or other white beans, rinsed and drained
- **So far I have found alphabet pasta at Hannaford, Shaw's, and Trader Joe's. If you can't find it, you can certainly use orzo or dittalini instead.
Cooking Instructions
Bring broth and sauce to a boil. Stir in pasta, veggies, and beans. Simmer uncovered 6-8 minutes, until pasta is done.
The soup thickens as the pasta soaks up the broth, so it is a good idea to have extra broth on hand to thin out leftovers.

My kids both slurp this up! The beans add a punch of protein.
