This is a great recipe to use as a guide: vary the toppings to your heart's content. Blue cheese and diced ham, cheddar and bacon, cheddar and broccoli, parmesan and roasted peppers, etc. And it's super Mom-friendly for us Super Moms....bake the potatoes in the morning (or even the night before) and you have have these on the table with a salad in 15 minutes.
