- 1/2 head of garlic, peeled and finely pureed
- 2 chickens, 2 1/2 lbs each, quartered, bone-in, skin-on
- 2 tablespoons dried oregano
- Coarse salt and freshly ground pepper to taste
- 1/4 cups red wine vinegar
- 1/4 cups olive oil
- 1/2 cups pitted prunes
- 1/4 cups pitted Spanish green olives
- 1/4 cups capers with a bit of juice
- 3 bay leaves
- 1/2 cups brown sugar
- 1/2 cups white wine
- 2 tablespoons fresh Italian parsley or cilantro, finely chopped

I also had to cook an extra 10-15. I add extra prunes.

this recipe is DELICIOUS. i think i had to cook it an extra 10-15 min. could be my oven, though :P

Very yummy! Thawed from frozen, then sprinkled brown sugar and red wine before oven time. Tossed several cut up new red potatoes while roasting (baking? Roasting? I get confused). I accompanied with spring greens and rice.
