My husband received a well-deserved promotion today, right around 4:30 in the afternoon. His favorite dessert is an apple pie, and even though we are drowning in apples from a recent trip to the orchard, a homemade pie is not something I could whip up on the fly. These dumplings, however, went into the oven in under five minutes. And oh, wow, they are sinful! The buttery sugar topping makes the most amazing crust on top, and the liquid in the pan makes a crazy-good-gooey bottom.

I cut the recipe in half (and 1/3 the amount of soda) and used an 8x8 pan for two reasons: one, I was skeptical of the whole Mountain Dew thing, and two, even if they turned out awesome, we didn't need a 9x13 pan of apple dumplings laying around.

These should be your new secret weapon for the fall. They're scrumptious enough to serve for company but so easy. And cheap!
