This doubles easily - you may just need two pans.

This is hands-down my easiest and most trusty entertaining meal. It pleases hungry guests with minimal effort at minimal cost. I always do two pork tenderloins ($5.50 each at Trader Joe's) and about 4 sweet potatoes and 2-3 pears. Green pears work just as well (make sure they are firm-ripe).

Based on the review above and several others on the Real Simple site, I decided to line my baking sheet with a trusty sheet of parchment paper, and I did not have the sticking problem. I also drizzled the pork with honey before wrapping it in the prosciutto. Lastly, I tossed in seven or eight cloves of smashed garlic with the vegetables because, well, I don't think a little garlic ever hurt anything savory.
What a terrific meal this is to have in your arsenal - and true to its' parent, Real Simple magazine. Easy, one dish, not too many ingredients. You can confidently entertain with this (I am seriously thinking Christmas dinner) or serve it to your hungry family on a busy weeknight.

My 20 month and I really enjoyed this recipe. The pears and the pork were especially delicious together. My husband liked it, but thought it could've used some kind of a sauce (not sure what, though). I would suggest using a cooking spray in addition to tossing the sweet potatoes and pears in oil. I lined my sheet with foil, but didn't use cooking spray this time and the sweet potatoes really stuck to the sheet.
