It may take a tad longer than 1.5 hours. I put foil on top for part of the cooking because it got really crispy. Love this chicken - it's so juicy.

I rubbed outside with 5 tb salt, 5 tb pepper, and inside with 2 tb salt, 2 tb pepper. also, can add fennel, carrots to onions on bottom.

So easy! I'll season the skin and cavity with salt more heartily next time.

It really is "perfect." Perfectly juicy and subtly lemony. I skipped the gravy because we weren't eating it right away (saving it for salad the next day).
