- 2 Tbs. unsalted butter
- 1/2 cup fresh breadcrumbs
- Kosher salt and freshly ground black pepper
- 1 cup heavy cream
- 2 cloves garlic, smashed and peeled
- 2-1/2 oz. bacon (about 3 strips) or 1-1/2 oz. thinly sliced pancetta
- 2 cups cooked winter greens (spinach, Swiss chard, kale, or broccoli raab)
- 1/3 cup freshly grated Parmigiano Reggiano, or a combination of Parmigiano and another hard cheese like Gruyère, Emmental, or aged Gouda

This was great! I messed up and didn't read the directions about quantity of uncooked greens so the casserole was a little flimsy, but it turned out well anyway. Used a mix of kale and spinach, with panko breadcrumbs on top.

This is a great method to learn - a very versatile recipe. Of course, you are reducing the healthfulness of the greens by bathing them in cream and cheese, but as I always say...not all calories are empty calories. Delish!
